A friend of my mine got me a wait assistance job at a restaurant that he and another friend were working at during high school. The job was usually 2-3 evenings and the pay was good from the tips shared with the servers you worked under for the evening. It was a good job.

The work was fast paced and soon after I got the job I found a rhythm for clearing tables, cleaning the surrounding area and resetting tables. I also started running drinks and food and relaying orders to the server when the place was busy. One of my friends and I were the fastest and most efficient wait assistances and the servers were always asking to have us in their sections.

The other main job of the wait assistance crew is to run water, bread and butter to a new tabletop right after guests are seated.

Sometimes you come across the most interesting conversations as you’re working. I’m not one to stick around and listen to gossip from folks, but as you’re handing out waters, serving food or clearing tables, you just happen to hear things and this one conversation has always stuck with me, even 25 years later. I could only imagine what these two ladies were talking about.

A two top is sat and I fill two water glasses, fill a bread basket and plate butter. As I approach the table this is what I hear:

Lady 1: Don’t be scared when its your turn. There’s nothing to be scared about.

Lady 2: Are you sure? I’m nervous about it.

Lady 1: I’ve had it happen to me before and it’s natural.

Lady 2: When did you know it was time?

Lady 1: When it’s time, you’ll know when its going to happen and it’ll squirt all in your mouth and it’ll be gross.

I’m not sure what they were talking about because I had walked away from the table so who knows where the conversation went and what it was exactly about.
